From 10th to 16th August, we’re raising a glass to one of the summer’s most extraordinary spectacles with the launch of our limited-edition Eclipse cocktail.
Created to celebrate the rare solar eclipse taking place over Falmouth Bay on Wednesday 12th August, this vibrant seasonal special is available throughout the week, giving you plenty of opportunities to savour a taste of the occasion.
Crafted with bourbon whiskey, Chambord, cranberry juice, fresh lime and muddled raspberries, Eclipse is a beautifully balanced cocktail that’s as striking to look at as it is to drink. Served over crushed ice and finished with fresh raspberries and mint, it’s the perfect blend of sweet, sharp and refreshing summer flavours.
If you’re joining us for Shanties and Skylines on Wednesday 12th August, there’s no better way to toast the evening. Settle onto our sweeping seafront lawns overlooking Falmouth Bay as the Falmouth Air Show and rare solar eclipse unfold overhead, with live music, delicious food and spectacular views creating an unforgettable summer atmosphere.

Simply muddle the raspberries in the base of a cocktail shaker, add the remaining ingredients with ice, shake well, then fine strain over crushed ice. Garnish with fresh raspberries and mint, then enjoy.
