Meet Kai: Behind the Bar at The Falmouth
From The Greenbank to The Falmouth, Kai has taken on a new chapter as Bars Manager, bringing his experience, enthusiasm and love of a good drink to the team. We caught up with him to find out more about life behind the bar, his inspiration and his ultimate end-of-shift drink.
You’ve been part of The Greenbank for some time and now oversee the bar at The Falmouth too – what has this new chapter been like?
It’s been a really exciting new chapter. I’ve been part of The Greenbank for a while, so stepping into the role at The Falmouth has been a great opportunity to take everything I’ve learned and put my own stamp on things. There’s a real energy around the place, and I’ve loved getting to know the team, the customers and the rhythm of a slightly different venue. It’s definitely kept me on my toes, but in the best possible way.
How would you describe the personality of each bar, and what makes them different?
The Falmouth – Relaxed, welcoming and family-friendly, with a more laid-back atmosphere.
The Greenbank – Sophisticated and romantic, with cocktails and beautiful harbour views.
What do you love most about being a Bar Manager?
What I love most about being a Bar Manager is creating an atmosphere where both customers and staff enjoy being. Every shift is different, and I enjoy leading a team, helping them grow and making sure everyone works together to deliver great service. I also like the fast-paced environment, solving problems on the spot and finding ways to improve operations. Seeing customers leave happy after a great experience is one of the most rewarding parts of the job, and it’s satisfying to know I played a role in making that happen.
When creating cocktails or shaping a drinks menu, where do you find inspiration?
Inspiration comes from everywhere: seasonal ingredients, local produce, travel, classic cocktails and conversations with the team. I like taking familiar flavours and giving them a modern twist, while keeping the menu approachable, balanced and enjoyable for every guest.
What, for you, turns a good bar experience into a memorable one?
A well-made drink, good music, friendly service and someone behind the bar who genuinely cares about what they’re doing. When all of that comes together and people leave feeling like they’ve had a great time, that’s what makes it memorable for me.
What’s your personal go-to drink at the end of a long shift?
It depends on the day! If I’m in the mood for a cocktail, it’s usually a Negroni. Otherwise, I’ll happily pour myself a glass of Malbec. If I don’t fancy alcohol, my go-to is a Mother Root Ginger Aperitif with tonic – it’s healthy and refreshing, but still feels like a proper end-of-shift drink.
Are there any local brands that you like to showcase within your menus? If so, who?
Yes, I’m proud to showcase Loveday Gin and Rum on our menu. It’s a great way to support a local independent brand while highlighting the quality of their products.
If you could mix a cocktail inspired by Cornwall, what would be in it?
That’s a tough one because there’s so much inspiration in Cornwall, and so many great ingredients to draw from. I think it would have to be a Rock Samphire Martini, made with Loveday Falmouth Dry Gin and Knightor Dry Vermouth infused with rock samphire.
